Taste Apulian delicacies[modifica]

  • The sparkling white wine of Locorotondo is famous in Italy. The village preserves a centuries-old viticultural vocation that has privileged the production of excellent white wines. Wine lovers cannot but taste the Bianco Locorotondo Doc white wine, Antico Locorotondo or Faraone Verdeca produced by local wineries and extending over the hills of the Murgia. This wine is characterized by its straw yellow color, fruity aroma and fresh and delicate taste. During the summer months, the winery that now manages the vineyard on the Lungomare hill organizes a tasting of its wines directly between the rows of vineyards, enjoying a breathtaking view.

  • The typical dishes not to be missed in Valle d'Itria are:
  1. A CIALLÉDDE : It is a poor, nutritious, light and fresh dish. In a large bowl there is cold water, and crushed tomatoes, a stalk of chopped celery, oregano, salt and bread (optional are pepper or chilli and garlic).
  2. CICERI E TRIA : Perhaps it is one of the oldest dishes in Salento, with fried pasta and chickpeas.
  3. GNUMERÈDDE SUFFUCHÈTE : It is prepared with tripe, and adult lamb entrails that are wrapped. Inside there are some parsley leaves.
  4. ORECCHIETTE ALLE CIME DI RAPA E MOLLICA : are a must of the Apulian tradition. It consists of pasta (named "orecchietta"), broccoli rabe, garlic, oil, anchovy, laurel and fried bread mollica. The most common and lighter version includes only broccoli rabe and garlic.
  5. PUREA DI FAVE BIANCHE CON CICORIA SELVATICA : It's a tasty, simple, healthy dish. Of rural origin, this dish used the products of the Salento countryside such as broad beans and chicory that grew wild. It represents the discovery but also the union between the bitter taste of chicory and the sweetness of broad beans.
